Ingredients:
2 cups of stale bread (such as French bread or Italian bread)
1 ½ cup of milk
2 eggs
¼ cup of sugar
2 tablespoons of butter, melted
1 teaspoon of vanilla extract
¼ teaspoon of salt
Optional: ¼ teaspoon of ground cinnamon and/or ¼ cup of raisins
Instructions:
Preheat oven to 375°F.
Cube the stale bread into 1-inch cubes. Place in a medium-sized bowl.
In a separate bowl, whisk together the milk, eggs, sugar, melted butter, vanilla extract, salt, and cinnamon (if using).
Pour the wet ingredients over the bread cubes. Mix together until all the cubes are evenly coated.
Gently fold in the raisins (if using).
Spray two individual-sized ramekins with cooking spray, and pour the bread pudding mix into the ramekins.
Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown.
