  3. Spread the salmon mixture over the sushi rice and then top with the cucumber, avocado, and remaining 1/2 cup of sushi rice.
  4. To roll the hand roll, start at the end closest to you and use the bamboo rolling mat to tightly roll the nori into a cylinder. When you get to the end, wet your fingers with a little water and press the edges of the nori together to seal the hand roll.
  5. Repeat with the second sheet of nori.
  6. Cut the hand rolls into 1-inch pieces and serve.
