Ingredients

  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of oregano
  • 1 teaspoon of smoked paprika
  • 2 cups of chicken broth
  • 1 cup of tomato sauce
  • 1 bay leaf
  • 1 pound of white fish fillets, cut into chunks
  • 2 potatoes, peeled and diced
  • 1 zucchini, diced
  • 1 carrot, diced
  • 1/2 cup of frozen peas
  • 1/4 cup of chopped fresh cilantro, plus more for garnish
  • Salt and pepper, to taste

Instructions

Heat the olive oil in a large pot over medium heat. Add the onion, bell pepper, and garlic and cook, stirring occasionally, until the vegetables are tender, about 5 minutes. Add the cumin, oregano, and smoked paprika, and cook for 1 minute.

Add the chicken broth, tomato sauce, and bay leaf. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.

Add the fish, potatoes, zucchini, carrot, and peas. Simmer until the vegetables and fish are cooked through, about 10 minutes.

Stir in the cilantro, and season with salt and pepper to taste. Garnish with additional cilantro and serve.
